february goal recap


I can't decide if I accomplished this or not.  I didn't eat any fast food this month but I did eat at Jimmy John's twice....which I suppose technically would be fast food.

Ok so that's all I have to say about that.

my new favorite snack

This is probably one of my favorite food pins.  That's saying a lot because I have pinned a lot of recipes that are really good but not so healthy.  This one is super simple and healthy too!

So you take this...

Slice up the apples thinly then juice the orange and lemon over top.  Let it soak for awhile.  That's it. 

I have been using half of a lemon because the oranges I bought aren't very sweet.

weekend recap

I looked out the window shortly after I woke up Saturday morning and saw everything was covered with a thick layer of frost so I went out to take some pictures. 


I stopped to visit some horses while I was out.  Last winter I tried to get some pictures of these horses but they were not interested in me at all and ran to the other side of the pasture.  They were much friendlier this year and stopped eating to come see what I was doing.

I wish this one was a little clearer but I like it anyway.

Dave and I went to Sioux Falls later that morning to do my six month ring cleaning.  We stopped to get gas and drinks before leaving town.  I grabbed these chips to try.

Ew. I ate one chip and that was enough.

We did a little shopping while in town but didn't buy much.  We went to visit my grandma (the one who turned 100 a couple months ago).  She had a mini-stroke Friday night/Saturday morning.  We didn't stay very long because we could tell that she was exhausted but was trying to be a good hostess and stay awake while she had company.

We went to my BIL's house Sunday to help celebrate our niece and nephew's birthdays. 

We spent a few hours there.  Sarah and I went out to take a few pictures but it was windy and chilly so we didn't stay out long.

cheers to the freakin' weekend

I've had that song in my head since I woke up today for some reason.

I can't believe it's already Friday afternoon! This week went so quickly but hey, I'm not complaining!

I don't think I've mentioned that some of my coworkers and I are doing a wellness challenge.  Each week we have to weigh-in and report if we gained/lost and if we exercised 3x the past week.  We have to pay in $2 for gaining and $2 for not exercising 3x.  I had to pay in $4 this week.  I really need to get my @ss in gear!!  I saw this on Pinterest last night and offered it to one of my coworkers as our new diet plan (we'd both been talking yesterday how we're struggling).


We don't have much planned for the weekend.  That's ok since we already have a blizzard watch posted for Sunday. 

Maybe I'll do some baking....though that would not help my weigh-in next week.

weekend recap

Dave and I started out our weekend by going to Cubby's for lunch on Saturday.  We hadn't been there for a long time and decided that it'd probably be the only time all weekend we'd be able to get a table there.  After lunch, we walked over to the music store so Dave could get some new guitar strings.  I thought these guitars looked kind of cool.
I did our taxes Saturday afternoon.  I'm glad to have that taken care of!  We also did our grocery shopping that afternoon.  I thought we'd beat the Superbowl shopping crowd but I think we were in the middle of it instead.

I made a new recipe for supper that I'd gotten off Pioneer Woman's reader recipes a few years ago.  It's called spaghetti loaf and it's really, really good.

It makes a huge amount of food though.  My husband has a big appetite and we were still only able to get one half eaten.

Spaghetti Loaf
Brown hamburger, then mix with spaghetti sauce
Prepare spaghetti noodles(I made a little over half a box) and mix with sauce
Cut a loaf of French bread in half lengthwise
Sprinkle garlic salt on bread, top with spaghetti, then top with shredded cheese

Bake in oven at 350 until cheese has melted


Sunday was a relaxed day.  We hung out and watched the pregame shows.  Dave visited his brother's family for awhile.  I stayed home and read .

I love Duck Dynasty so it was fun to learn more about the family. 

Of course, we watched the Superbowl.  Well, I half watched as I read.  I didn't think the commercials were very good this year, though I did like the Dodge farmer commercial.

Quite possibly my biggest accomplishment of the weekend was getting Dave to throw this sock away:

It's like he has an emotional attachment to his socks.  Maybe it's a guy thing?

february goal


I decided that my February goal needed to be something health related.  I put some weight back on over Christmas and have baisically been stuck in a 2 pounds down, 2 pounds up cycle since.  We don't eat fast food a lot but often enough that it'll be a challenge to cut it out completely.
